On Sunday 25 March, Five Senses Victoria introduced the Synesso and made their imprint as one of the premium boutique roasters at the 5th Annual Melbourne Food and Wine Festival.
Featured as part of the “Wiked Sunday” Festival, the Victorian team, with the help of top Barista from WABA (Western Australian Barista Academy), Jennifer Murray, managed to produce over 1,000 cups of premium quality coffee using their award winning “City Espresso” blend for the festival’s punters.
The highlight of the day for the Five Senses team and the coffee geeks alike was of course, the new baby of the family, the Synesso Sabre.
Imported from Seattle within days of the festival, this brand spanking new two group Synesso Sabre really did hold up its end of the bargain and managed to maintain flawless consistency and control with every second of the extraction process throughout the day, even after the insane amounts of espresso poured and the fluctuating climate that is Melbourne’s weather.
The weather played a big part at this year’s festival, and the Five Senses team were rather anxious about the predictions for the upcoming Sunday. And when I say anxious, I mean totally emotionally distressed

. At one point, Gavan, curled up under his desk in the foetal position sucking his thumb and shaking uncontrollably. That’s because Friday’s (2 day’s prior to the event) weather reached a scorching 35 degrees and then Saturday (event-eve) followed with a miserable 20 degrees and poured with rain. Thankfully, the festival hosted beautiful sunny 25 degrees with no rain . I starting to think that Gavan’s problem wasn’t necessarily the weather, but maybe one too many espressos.
The radiant weather made for an exciting day for all, including the coffee geeks, café owners and the local Melbournians taking their pooches for a stroll along the banks of the Yarra at Federation Square. Amongst all the hustle and bustle of cheap espresso ($1.50 a cup), we took along our gorgeous retail packs for the ride, our Reg Barber Tampers and our trusty Mazzer Robur grinder. But none made more of a spectacle than the barista’s dream machine, the Synesso.
Being the centrepiece of the show, the team had no trouble showing off all the Barista friendly benefit’s of Mark Barnett’s second successful addition to the Synesso range, the Sabre, I just like saying it’s name … meow, and we were more than happy to invite café owners and coffee geeks into the Five Senses tent to drool over the pristine polished, dangerously curvy body that is this fine work of art.
All in all, Five Senses went off with a bang, don’t worry it wasn’t the Synesso. We’re proud of the display in the tent, the high quality of espresso and milk texturing produced and of course the interest from the punters that where more than happy to stand around, having a chat over flawlessly roasted “City Espresso” and dreaming the day away, at the 5th Annual Melbourne Food and Wine Festival.
