Starbucks Aerocano: When Texture Becomes the Coffee Innovation
Starbucks is adding the Aerocano to its core menu across North America on September 29, 2026. The drink uses Blonde Espresso and ice, with air-whipping to create a light foam and a cascading visual effect. A Caramel Aerocano will join it. The launch is notable because the central change is texture and preparation, rather than simply another flavored syrup.
From South Korea to a wider market
According to Starbucks, the drink first reached customers in South Korea earlier in 2026. Iced Americanos are especially familiar there. Starbucks then worked on a method that its baristas could reproduce across many stores, testing how the drink was aerated and poured. The company describes the result as a new interpretation of an Iced Americano, with a softer mouthfeel and a visible cascade as it settles.
That geographic path matters. Beverage ideas do not necessarily travel from North America to Asia; in this case, a format associated with South Korean coffee culture has moved in the other direction. Starbucks says about 60% of the beverages it sells globally are cold, giving the company a clear reason to develop more cold coffee options.
What should coffee drinkers expect?
The basic Aerocano puts espresso texture at the center of the experience. It is best approached as a different way to serve iced espresso, not as a substitute for every creamy milk drink. Taste will still depend on the coffee and the final recipe. Coffee-Explorer has not independently sampled the launch drink, so claims about its flavor remain Starbucks’ description.
For cafés and home brewers, the interesting question is whether aeration can make familiar espresso drinks feel new without adding many ingredients. A useful follow-up would compare an Aerocano, a standard Iced Americano and a cold foam coffee side by side, examining sweetness, texture, preparation time and consistency.
