Certified Special Coffees
The association CSC – Certified Special Coffees – ascertains and observes common rules that improve the quality of coffee.
Born with the passion of a group of roasters
CSC is an association born of the experience and passion of a group of roasters with a single common purpose: that of promoting the culture of quality coffee, to affirm the value of a quest arising from their own traditional professional backgrounds. CSC offers the support of its ability and experience, providing its members with access to selected and certified raw coffees, so that the final product is not just any old cup of coffee, but a coffee of true quality.
Selection and controlling
CSC has personally gone to select the plantations to work and verify the quality of the harvest on the basis of the preset standards. All the batches bought by the associates are re-controlled at unloading and undergo verification by some of the most qualified tasters . For each country of production a classification of the best producers has been created, introducing improvements, sometime substantial, and other important specific techniques, for example, the ideal areas and altitudes for cultivation or the best period for shipping. Every origin has its own requisite characteristics of excellence and each harvest is tested according to these parameters. Furthermore, the CSC controllers go to the roasters to check that the blends marketed with our seals are exclusively produced from certified green coffee and that they have respected the correct roasting, blending and packaging procedures.
CSC caused changes
In the area of green coffee, in the last half century, CSC made great changes. The producers have privileged quantity, with huge problems for the quality. But today there is a movement in the world to privilege the more traditional and antique qualities of coffee. To keep the quality high for its associate roasters, CSC started from a basic concept: not only to recognise with an award, as we always do, to the producers that aim at quality, but to establish a minimum price under which we do not think it is correct to go, no matter what the stock market price indicates. This is to allow the producers to continue producing coffee at a high standard and for us to consistently receive high quality coffee. CSC’s aim is to raise the standards of quality and to sensitive the professional consumer.
